Cook steak to at least 145°F for safe consumption.
Cooking via Pan-Fry: Preheat the oven to 450°F.. Season steaks with salt and pepper. In a skillet, heat butter and olive oil on medium-high heat. When melted, sear the bacon on the exterior for 10 seconds. Then, sear steaks on both sides for about 1 minute.. Finish in the oven for 7-10 minutes (medium-rare - adjust cooking time for preferred doneness). Allow to rest for 5 minutes before serving.
Cooking via BBQ: Preheat grill to medium-high heat. Sear the bacon exterior until slightly crisp. Sear steaks for 1 minute per side over direct heat, then move to indirect heat and grill for 5-7 minutes with the lid closed. Rotate for even cooking. Let rest for 5 minutes before serving.
